Grilled Steak with Chimichurri Sauce
This recipe is a simple yet flavourful way to showcase the quality of Nether Haugh Farm’s beef. The rich, marbled texture of our steaks pairs beautifully with the fresh, zesty chimichurri sauce, creating a dish that’s sure to impress.
Ingredients:
For the Steak:
- 2 Nether Haugh Farm beef steaks (ribeye, sirloin, or your preferred cut, around 250–300g each)
- 2 tablespoons (about 30ml) olive oil
- Salt and pepper to taste
For the Chimichurri Sauce:
- 100g fresh parsley, finely chopped
- 50g fresh cilantro (coriander), finely chopped
- 4 garlic cloves, minced
- 2 tablespoons fresh oregano, chopped (or 1 tablespoon dried oregano)
- 120ml olive oil
- 60ml red wine vinegar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- Salt and pepper to taste
Instructions:
- Prepare the Steaks:
- Take the steaks out of the fridge at least 30 minutes before grilling to allow them to come to room temperature. This ensures even cooking.
- Rub both sides of the steaks with olive oil, and generously season with salt and pepper.
- Make the Chimichurri Sauce:
- In a medium bowl, combine the chopped parsley, cilantro, garlic, and oregano.
- Stir in the olive oil, red wine vinegar, lemon juice, and red pepper flakes.
- Season with salt and pepper to taste.
- Let the sauce sit for at least 10 minutes to allow the flavours to intensify.
- Grill the Steaks:
- Preheat your grill to high heat, around 250°C. If you’re using a charcoal grill, make sure the coals are glowing red with a light layer of ash.
- Place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or longer if you prefer your steak more well-done.
- Use a meat thermometer to check the internal temperature: 54°C for medium-rare, 60°C for medium.
- Once cooked to your liking, remove the steaks from the grill and let them rest for 5 minutes to retain their juices.
- Serve:
- Slice the steaks against the grain and serve with a generous drizzle of chimichurri sauce on top.
- Pair with a fresh summer salad, grilled vegetables, or roasted potatoes for a complete meal.
